Soufflé~Soft your heart~


Soufflé is a France dessert which is a lightly baked cake made with egg yolks and beaten egg whites combined with various other ingredients and served as a savory main dish or sweetened as a dessert. You may taste it in some fine dining restaurant with a very high price. However, the soufflé actually just cost few bucks and easy to do. This is my first time to make soufflé, so it’s not really successful, as the outlook not so nice, by the way the taste is nice. Yummy~ Next time, I would try out to make different flavors.

“The word soufflé is the past participle of the French verb souffler which means "to blow up" or more loosely "puff up"—an apt description of what happens to this combination of custard and egg whites.”

Ingredients
2 eggs white
1 egg yolks
1 tablespoon of flour
2 tablespoon of caster sugar
50ml of milk
A little bit vanilla extract



Methods
·         Pre-heat the oven to 200’c. Heat the milk to warm by microwave.
·         Add 1 tablespoon of caster sugar to egg yolk, stir it till white yellow color, and then add in little bit vanilla extract. Later, strain and pour the flour into the mixture eggs, then pour in the warm milk, set aside.



·         Place the egg whites in a large clean bowl. (Note: Make sure there’s no oil or water in the bowl at all.) Use an electric mixer to beat the egg whites until many bubbles form. Add the sugar, a little at a time; beat at high speed until stiff peaks form. Make sure not to over beat the egg whites, lest they will break down.
·         Transfer the egg yolk mixture into a large mixing bowl. Gently fold-in the egg whites and stir in to loosen the consistency. Later, spoon the mixture into ramekins. Fill in 80% of ramekin is enough due it will expand till very high. Then, bake it in the preheated oven for about 15 minutes, or until golden brown and risen 2cm above the rim. Serve immediately dusted with cocoa powder.

As what we knew, 14 of Febuary is Valentine's Day. Love birds are celebrate with their partner in various kind of romatically ideas. But, do you know Y generations had found out 14th of each month are Valentine's Day, such as White Valentine's Day, Purple Valentine's Day and so on ...

Scratching ur head to think about what should buy for your love one as a valentine's gift on coming Valentine's day? Luxury one? Hand-made handicraft? Dinner?

No worry...  my friends !! Let's do something easy yet sweet little thing for her / him. This is only need your 3 minutes to do it.


~Romance Refreshment~

Prepare following ingredients that needed :-

  1. Corn Flakes Classic / Original (Any brand that you prefer)
  2. Cooking Chocolate (May use dark chocolate if you like)
  3. Pastry Cup
  4. Rainbow Ball (Others topping that you like)

Chinese Dumpling

Peeps ~ busy with your work, appointment, assignments, or date?
When is the last visit to your beloved parent and siblings?
How long period you never have a proper dinner with your family?  Miss your parent home-made dishes?
It is time to “balik kampong”!! Or you can organize a gathering with your love one!! Let's made something that could let everyone feel warm and happiness.
What is that? Home-made Dumpling !!
Chinese dumplings or “Jiaozi”, with meat and vegetable fillings, is a traditional Chinese Food, which is essential during holidays in Northern China. Chinese are Masters in the Art of Making Dumplings.

The history of “jiaozi” dates back to ancient times, some 500-600 years ago. As the Spring Festival marks the start of a New Year, people choose to eat “jiaozi” to connote their wishes for good fortune in the New Year. Chinese dumpling is one of the most important foods in Chinese New Year. Since the shape of Chinese dumplings is similar to ancient Chinese gold or silver ingots, they symbolize wealth. The members of family will get together to make dumplings during the New Year's Eve.
There is no set rule as to what makes dumping fillings. They can be anything from vegetables, meat to seafood. Whatever the fillings, the wrapping skill needs to be exquisite to make “jiaozi” look attractive.
Chinese dumplings may be round or crescent-shaped, boiled or pan-fried. The filling may be sweet or savory; vegetarian or filled with meat and vegetables.

There is really easy to "produce" a bowl of dumplings ... ...
It is only take 35 minutes ... ...


First of all, spend 10 minutes to preparing all the ingredients:
- garlic, onion, carrot, spring onion, coriander (fresh, chopped fine)
- cabbage (300grams)
- 1 maggie "ikan bilis"/chicken paste cube.
- a medium size pot, boiling the water (1.5 L) while     wrapping the dumpling
- the filling you can choose either chicken, pork, beef or seafood like prawn ( 800 grams )
- 1 pack of dumpling skin (30 pieces)
- 2 packs of Enoki
- small bowl with water for dipping
        

The progress ... ...  
          
 The soup
  • Fried the garlic until golden color.
  • Add the maggie paste cube into 1.5 L water.
  •  Add the cabbage into the soup and add little bit more salt and pepper. 



     The filling
    • Mix garlic, onion, carrot, spring onion, coriander with the meat.
    • Add in some salt, corn flour and sasame oil to make the filling become sticky.

    Step 1 : Place the meat at only one side
    Step 2 : Fold the dumpling skin
    Step 3 : Dip some water at the corner of dumpling skin. (To make it stick more firmly)
    Step 4, 5, 6 : Cook the dumpling with another pot of boiled water (medium-well)
    Step 7 : Prepare a small frying pan. (If you wanted to have some fried dumpling)
    Step 8 : Fried the dumpling both side untill well done.
    Step 9 : Add in Enoki into the soup while fried the dumpling.
    (To serve the best chewable Enoki, the best timing is not more than 3 minutes) 

    Before eating, you need to prepare some small dishes to contain the mixture of soy sauce, vinegar, and sesame oil or
    pepper oil to your own taste.

    Crème Caramel


    Even Valentine’s Day had passed, yet you still can do something to make your partner feel sweet~
    You may handmade yours partner’s favorite dessert---Crème Caramel.

    Crème Caramel is the famous France dessert. It is a custard dessert with a layer of soft caramel on top, as opposed to crème brûlée, which is custard with a hard caramel top. The dish is eaten throughout the world.”

    Here we start to do~

    Preparation time: 20minutes
    Cooking time: 20minutes
    Portion: Four 150ml of ramekins

    Ingredients of Custard 
    160ml of whipping cream
    160ml of milk
    ½ teaspoon of vanilla extract
    2 slices of lemon peel (optional)
    2 eggs
    1 egg yolk
    50g caster sugar
    Proportionally hot water

    Ingredients of Caramel
    100g Caster sugar
    50ml of water

    Methods
    1. Prepare Caramel: prepare saucepan, pour in water, then sugar, and stir it gently. With high heat, boil it, but do not engage in the mix. Continue to cook until dark brown. Remove from heat. (Once the sugar has started to caramelize, watch it carefully. It takes just seconds for caramel to go from great to burn.) Meanwhile, averagely poured caramel into four ramekins and wait to use.
    2. Warm up the oven to 160C/320F. Meanwhile, mix together the egg yolks, caster sugar, and vanilla in a large mixing bowl. 

    3. In a medium saucepan, bring in the milk, cream and lemon peel (optional) to just below a boil over medium-high heat.Place the mixing bowl on top of a towel to keep it from wobbling while whisking in the hot liquid. Slowly whisk in the hot milk mixture at a time, trying to prevent excess bubbles. 
    4. Pour the custard strain through a sieve into the caramel-lined ramekins, fill the baking dish with water to come halfway up the sides of the ramekins. (laying a towel inside the baking dish to avoid the ramekin sliding, then place 4 ramekins wait to use.) Bake until just set, 25 to 50 minutes. (Baking time will depend on the thickness and depth of your ramekins and baking dish.)


    5. Carefully remove the baking dish from the oven and let the ramekins cool in the water bath. Remove, cover with plastic wrap and refrigerate at least 3 hours.
    6. Run a thin knife around the edge of the custard and invert onto a dessert plate, scraping any caramel from the ramekin onto the custard.

    5minutes chocolate cake


    Have you sudden feel want to have some dessert? Have you ever know you may make a cake within 10minutes? Have you ever try to bake a cake by a microwave? Here’s the way to do~ I tried and success~

    5minutes chocolate cake  
    Preparation time: 2minutes
    Cooking time: 3minutes
    Portion: 1 people

    Ingredients
    50g of Black chocolate
    4 tablespoon of plain flour
    3 tablespoon of caster sugar
    3 tablespoon of unsalted butter
    3 table spoon of milk
    1 egg
    ¼ teaspoon of vanilla extract

    Method

    1. Put in chocolate and butter into a saucepan, and melt it by putting the chocolate mix saucepan in a big pot with fill in water, then low heat make it get melt, and wait for use.

    2. Put in plain flour and sugar in to another saucepan, mix it well. Add eggs to stir. Then, pour in milk to whisk. Later on mix in the chocolate mix, and add in vanilla extract. Later on, pour into the big mug, which cover 60% of the mug.



    3. Then, put it into oven, with bake under 1000watt and 3minutes. DONE



    It's quick and easy rite?

    Home Made Yong Tau Foo

    Yong Tau Foo is a Chinese soup dish with Hakka origins commonly found in Malaysia which brought from China. There are several selection of food items including fish balls, ladies fingers, chili and other seafood.

    Some of these items, for example bitter-ground and chili are usually filled with fish paste. The items are sliced into small and bite-size pieces and cooked briefly and serve with the soup.

    The are several options like noodles and rice mostly combine with those items also serve with sauces.

    Fund Raising - Baking Cookies and Making Fruit Jelly

    Sharing with you guys a great experience - Baking Cookies and Making Fruit Jelly for high school hall fund raising and Old Folks House Visit.

    If we have done this Corporate Social Responsibility (CSR) from small, for example, from primary school or high school, it really helps us not only raising the fund for school but also creating the "history" of your life so called "memorable moments".

    Home-made Loh Han Guo Hearbal Drink

    With the hot weather these days, the Loh Han Guo Herbal Drink would be the best choice for all of us to try it. 


    The making of this herbal drink considered easy because there are only few steps for you to complete it. About the time consuming, it’s just around an hour.


    Ready? 


    Here we go...



               
             When I was trying the home-made Loh Han Guo which making by myself, I couldn’t believe it because it’s really not that hard to make it as what I thought previously. The taste of it can be improved due to the additional of water (less than 2L would be better). It’s a good try for me to do so.

                Besides, trying to place yourself and a food and drinks making person, it would be a good feel from your deep heart so does others. It’s because of love, also the joy of bringing happiness to others; I think these are the reasons for them to stay as long as they can. Further, they would improve themselves to make more touching food and drinks for people.

                Haha! ^_^ From a small home-made herbal drink, I wish to share what I feel in my heart to all of you. The journey of life, it’s long. Company of friends and even memorable food also the food makers would let people feel how wonderful of this world could be.
